- 240 gm softened margarine or butter
- 400 gm brown sugar
- 120 gm eggs
- 1 tsp vanilla
- 360 gm all purpose flour
- 1 tbsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 0.5 tsp salt
- 300 gm quaker oats
- 240 gm cranberries, chopped
Procedure:
- heat oven 180-190*C
- with electric mixer beat margarine and sugar till creamy
- add eggs, vanilla and beat well
- in a mixing bowl combine flour, baking soda, cinnamon, salt
- mix well and add to margarine mixture
- stir in oats, cranberries ... mix well
- drop 1 tabespoonful on to ungreased cookie sheets
- bake 10 - 12 mins or till golden brown
- cool 1 minute on cookies sheets
- remove to wire rack to cool
- store in air tight container
