If you note any food allergy reaction whenever you or your love ones ate certain food ... from rashes, cough to asthma and anaphylactic reaction ... confirm it with an allergy test ... besides taking food allergen off the recipe and menu ... you need to ensure that there are no cross contamination from the worktop to equipments used ... read labels of packaged products ... unsured don't use ... it can be life threatening for someone with severe allergy and anaphylactic reaction.

Homemade Cream Puff with whipped cream filling

Ingredients for Puff Pastry:
  • 57 g unsalted butter
  • 1 tsp sugar
  • 1/2 tsp salt
  • 120 ml water
  • 75 g all purpose flour
  • 2 eggs

Method:
  1.  sift flour and set aside
  2. beat eggs and set aside
  3. in a pan add butter, sugar, salt and water
  4. on medium heat ... melt butter completely ... bring to a boil ... take off heat ...
  5. add flour all at once ... stir with a wooden spoon till combined ...
  6. back on heat ... cook till a smooth ball form and pulls clean of the pot ...
  7. get the pan off the heat ... let it cool for about 5 mins ... till no steam ... about 60C ...
  8. add eggs little by little ... blend well after each addition ... till thick and shiny ... drop of spoon ...
  9. transfer to a piping bag  ... pipe on to baking sheet ... 
  10. dip a teaspoon or finger in water ... push down pointed tips ...
  11. bake for 200C for 20 mins ... till puff up and golden brown ... cool on wire rack ...
  12. cut the pastry with serrated knife before piping in the filling ...

Ingredient for whipping cream filling:
  • 120 ml whipping cream
  • 30 g icing sugar
  • 1/4 tsp vanilla extract

 Method:
  1. pour whipping cream into a mixing bowl ... whipped till thicken at medium high speed
  2. add icing sugar and vanilla extract ... whisk till stiff peak forms ...
  3. transfer into piping bag ... pipe each cream puff with the whipped cream filling ...
  4. dust the top of the cream puff with icing sugar ...
