Savory Short Pastry / Quiche

Savory Short Pastry
Ingredients:
  • 300 gm Plain Flour
  • 180 gm Butter cubes
  • 1 no Egg Yolk
  • 55 ml Ice water
  • Pinch Salt

Procedure:
  1. sieve Flour into mixing bowl
  2. add Butter cubes, use in rub in method
  3. add Egg Yolk with Ice water
  4. with glove hand, knead into flour
  5. covered and chill overnight
  6. (make Quiche Sauce and Quiche Filling)

  1. make Rice Bag for tart shell
  2. dust and roll dough, cut and fit into bowl
  3. do not trim edge, add Rice Bag
  4. bake 180*C / 250*C for 20 mins
  5. cool at room temperature

  1. add Quiche Fillings, Quiche Sauce, Parmesan Cheese
  2. bake for 15 mins

Quiche Sauce
Ingredients:
  • 125 ml Fresh Cream
  • 125 ml Milk
  • 2 no Eggs
  • 3 gm Salt
  • pinch Salt
  • pinch Nutmeg
  • pinch Paprika

Procedure:
  1. in pot add Fresh Cream, Milk, Salt, Pepper, Nutmeg, Paprika
  2. warm over med heat, Do Not Boil, Off Fire, put aside
  3. in Mixing Bowl, Whisk Egg, add warm Milk Mixture,Whisking at the same time
  4. sieve mixture, cling wrap, cool at room temperature

Quiche Fillings
Ingredients:
  • 1 no Onion
  • 4 no Bacon strips
  • 2 no Hot Dog slices
  • 30 gm Parmesan Cheese

Procedure:
  1. heat oil in a pan, saute Onion till dry
  2. add Bacon strips, Hot Dog slice
  3. spread on tray to cool
